I am going to be cooking at the Loft again, May 27th and 28th. Below is 90% the menu I will be cooking. I say 90% because I will change my mind before the event about something,

Malt bread, unpasteurised English butter


Pigs head, knotweed, chorizo


Asparagus, poached – juice - raw, peanuts


Alexander soup, poached egg, shaved fennel


Pork neck carpaccio, lovage puree, taramasalata, cucumber seeds


Slow cooked mackerel, plums, sea vegetables, chicken toast


Lamb rump, onion fondue, watercress, smoked goats cheese


Rhubarb, yoghurt, sweet cicely granita, mint oil


Salted strawberries, lemon thyme caramel, burnt meringue
