I think it is great what Michel Roux Jnr is doing to promote restaurant service. We all know there is a huge lack a home grown talent.

But why is this?

Is it because it isnt seen as a 'glamourous' position?

Is it because there are no household names to act as icons and inspire youngsters into the restaurant trade? We all know the effect televised cookery programs has had on bringing people into the trade...... Good and bad that is.

Is it because of the huge amount of chain restaurants and brands, offering diluted training and promoting people way before they are ready, so they can pay them at a lower rate?

Whatever the reasons this is a great start, hopefully this will inspire even just a handfull of youngsters to move into the restaurant trade.
