Skate wing, potato juice, pine nuts, sea vegetables
Pigs head terrine, chorizo jam, watercress, beetroot
Celeriac tart, charred leeks, parmesan, hazelnut oil
Whipped sea buckthorn, rhubarb, crispy rice, toasted meringue
