New dishes 21st October 2011
It has been a while since I have blogged on here, due to being very busy, away alot and also short staffed. Today I thought would be an ideal time to do a short one as I am making some menu changes at Tuddenham mill.
I will blogging very shortly about my summer and what we got up to.
New dishes are below
Corn-fed chicken wing, parmesan, sultana puree, chicory
Wood pigeon breast and sausage roll, quince, pickled carrot, mugwort dressing
Goat’s milk panna cotta, hazelnuts, mint oil
Bitter chocolate textures, buttermilk, chilled rosemary tea
